Most supermarkets carry the usual seafood selection, but I was able to find razor clams at Foody Mart in Markham. You have NO idea how happy I was to see them. I'll admit it, I couldn't resist touching them because they look so bizarre. For those of you who've never had razor clams, they're sweet and tender, and not as fishy as regular clams. I've always wanted to make the Spanish razor clam dish on a flat griddle. I'm hoping to achieve the same result with a wide bottomed non stick pan. I think that the best way to prepare them is just to steam them open quickly, sear them, and serve them in a sauce of garlic, paprika, and wine.
